sweet + spicy roasted chickpeas

As a hummus fanatic, roasted chickpeas have been on my to-try list for a long time. Lemme tell ya, these are fantastic - sweet, spicy {hence their name!}, crunchy and simply addicting. I cooked up a batch of these, hoping they would serve as my snack for a few days. 

...they lasted about as long as it took me to write this post.


Sweet + Spicy Roasted Chickpeas {adapted from Espresso and Cream + Cupcake Project}
serves one hungry girl

- one 14.5 oz. can of chickpeas {rinsed, drained and patted dry}
- 1/4 tsp regular paprika
- 1/4 tsp smoked paprika
- 1/2 tsp dried oregano
- 3/4 tsp coriander
- 1/2 tsp brown sugar
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/2 T olive oil
  1. Preheat your oven to 400.
  2. Combine the sugar/spice combo and olive oil in a large bowl. Toss the chickpeas until well coated - remove any loose hulls before roasting.
  3. Evenly distribute the chickpeas on a foil-lined cookie sheet.
  4. Roast for 30 minutes until fragrant and crispy. Serve warm.
